ACQ’s own classic sourdough. We mix in large quantities of fresh-milled einkorn flour for a tender golden crumb. The dough undergoes long, thoughtful fermentation and is then baked to a deep coloring for added dimensions of flavor. The crust shatters while still being robust and the inside sometimes reminds me of marshmallows.
